You can thank us later: Your search for a healthy, easy-to-concoct and delicious salsa recipe is officially over. Given her métier, it isn’t that surprising that when, upon a recent visit to our office, Nicole Bernard Dawes, founder and CEO of the organic tortilla chip company Late July, became rhapsodic on the topic of her popular dip (her father founded Cape Cod Potato Chips so snacks are admittedly part of her DNA).
She makes this salsa for her family, and visits the school of her young sons’ to teach the kids how to prepare it at home.“I like to make a classic version, and then a second recipe using mango or tomatillos as a base instead of tomatoes,” says Dawes. “If friends come early, they can help with the chopping—it’s a great way to get them to hang out in the kitchen with you.”

Nicole’s Organic Homemade Salsa
Prep time: 15 minutes
Ingredients
3-4 medium-large heirloom tomatoes, chopped/diced to 1/4″
½ medium onion, diced
2 garlic cloves, minced
1 small bunch of cilantro, chopped
1 jalapeño, seeded and chopped
1-2 limes, juiced
Salt to taste
Optional ingredients: Mango, avocado, tomatillos, sweet corn, black beans
Directions
1. Prepare the tomatoes, onion, garlic, cilantro and jalapeño. Mix all ingredients in a large bowl and stir well. Juice the limes and add salt to taste. Consider adding other optional ingredients or prepare a second version using mango as a base. Can prepare up to an hour ahead.
